Harvesting for a working herb garden

Pick sprigs little and often, ideally before the plant flowers heavily. Regular light harvesting keeps new leaves coming and stops the plant becoming woody.

Harvest in the cool part of the day, rinse only what you plan to use, and remove tired or diseased material from the bed. A productive herb garden is built by repeated light harvests, not by cutting a new plant hard once.
